Curry Burgers with Cilantro Lime Mayo | AmandaNaturally.com Burgers are a staple in our house! Why? Because they’re quick to make, delicious and inexpensive. The last part is key, because when buying properly raised meat, cost does become a factor. And after beef shanks and organ meats, ground beef is the cheapest cut you can get! So between tacos, burgers, pasta sauce and chili (in the fall/winter), we eat a lot of it!

And while I could eat the same ol’ burger day in, day out (plain topped with salsa, sauerkraut, red onion and avocado – for anyone who’s interested!), I do enjoy changing it up from time to time. Case in point, this recipe for Curry Burgers with Cilantro Lime Mayo! By changing the spices and toppings just a bit, you have a whole new take on a typical meal!

We usually eat our burgers on top of a great big salad, but these guys would be perfect as sliders, on plantain biscuits buns or with a side of sweet potato fries

 

Try not to use the store-bought mayo if you can. In the USA you can buy ones made with clean oils, but so far in Canada we still only have canola oil-based mayos. Yes, even the ones that say “olive oil mayo” use predominantly canola oil. Homemade mayo is super easy to make though – check out my directions here.

Mayo Ingredients
  1. ⅓ cup homemade mayo (avocado oil, egg, sea salt, lemon, mustard powder)
  2. zest and juice of 1 lime
  3. ¼ cup packed cilantro, chopped
Burger Ingredients
  1. 1lb grassfed beef (or blend of beef and pastured pork)
  2. ½ onion, diced finely
  3. 2-3 tsp curry powder (I use 3, because we really like curry!)
  4. sea salt
  5. black pepper
Toppings
  1. Green onion
  2. Avocado
  3. Cilantro
Mayo Directions
  1. If you don't already have mayo made, pull an egg out of the fridge about an hour before making dinner.
  2. Make mayo, and set a ⅓ cup aside.
  3. Add lime zest, juice and cilantro to mayo and stir to combine.
  4. Refrigerate until ready to plate.
Burger Directions
  1. Combine all ingredients and form into 4 patties.
  2. Pan fry, or grill, about 5 minutes per side, until cooked through.
  3. Top with cilantro lime mayo, diced green onions and any other toppings you want!

Summer Berry Ice Cream

Summer Berry Ice Cream | dairy free | vegan | paleo | AmandaNaturally.comHave you had coconut milk ice cream yet? If your answer is anything other than “hell ya”, go out and get some right now! Specifically the brand Luna and Larry’s Coconut Bliss because it has the cleanest ingredients. It’s like the Hagen Daaz of dairy-free ice cream. Rich, creamy, and lots of great flavours (can you say dairy-free salted caramel & chocolate??). It’s amazing (I don’t work for them I swear, I just love the stuff). Other than a little bit of guar gum and their use of agave as sweetener, there’s nothing super sketchy about their ingredients. The only problem? It’s a little pricey and what do you do if you don’t have a store near you which carries them? Or what if you’re like me and you really have to be careful with the amount of guar gum you eat?

That’s where this recipe comes in!! This Summer Berry Ice Cream rivals anything that you can buy – and I’m not just saying that. Give it a try – I promise you won’t be disappointment.

This is a fairly quick ice cream recipe (with a little planning in advance) and the best part is it doesn’t require an ice cream maker (cause I don’t have one…hint hint family).

Summery Berry Ice Cream

Ingredients:

  • 1 can of Aroy D coconut milk (400ml)
  • 100 ml maple syrup (it doesn’t have to be exact, you’re trying to get to a total of 500ml or 2 cups of combined coconut milk/syrup)
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 1 cup frozen blueberries
  • 1 cup frozen blackberries

Directions:

1. Combine coconut milk, maple syrup, vanilla and sea salt. Stir well.

2. Pour into ice cube trays and freeze.

3. Once frozen, pop out of trays and dump into your high powered blender with 2 cups of frozen fruit. If you have a Blendtec like me, blend on “ice cream” mode. You might need to pause and scrape down the sides once or twice. (a Vitamix or food processor will work too, just be careful not to over blend!)

Scoop out and enjoy!

If you don’t serve it all up at once, you can put it back in the freezer for later. If it’s too hard, pull it out 5-10 minutes before you want it, to let it soften.

Homemade BBQ Sauce

BBQ Sauce | real ingredients | sugar free | AmandaNaturally.comBBQ sauces are loaded with junky ingredients – sugar, vegetable oils, weird texturizers/emulsifiers etc. – which is why I like to make my own. To be fair, homemade BBQ sauces are definitely more work than buying one at the health food store (which are often cleaner than the regular grocery store, but still contain all sorts of gums which give me migraines), but the flavour is totally worth it! 

When I go to the effort of making homemade sauces I make sure to make as large a batch as my soup pot can handle. Then I freeze in 2-3 cup portions so I have sauce on hand for the next few times I want it!

This classic-style BBQ sauce is going on a huge pork shoulder for Saturday night at the cottage this weekend (see my directions for Slowcooker Pulled Pork). I have also used it on BBQ chicken wings – simply season the wings with sea salt and pepper, then grill. Toss in a bowl with some heated BBQ sauce before serving. Easy and delicious! I can guarantee that this would be amazing on ribs as well, although I haven’t made ribs yet this summer. Stay tuned!

Easy homemade BBQ sauce. Make in large batches and store in the freezer!

BBQ Sauce Base
  1. 2 tbsp fat (tallow, lard, avocado oil, ghee)
  2. 2 onions, roughly chopped
  3. 2 apples, roughly chopped (skin can stay on)
  4. 1 head garlic, roughly chopped
  5. 2 cans organic tomatoes
  6. ⅓ cup raw apple cider vinegar
  7. ⅓ cup maple syrup
  8. 2 tbsp GF tamari or soy-free coconut seasoning
  9. 2 tbsp fish sauce (optional, but definitely adds a great layer)
Spices
  1. 2 tbsp cumin
  2. 1 tbsp chili powder
  3. 1 tbsp mustard powder
  4. 1 tsp paprika
  5. 1 tsp sea salt
  6. 1 tsp black pepper
  7. 1 bay leaf
Instructions
  1. Heat fat over medium high in a large soup pot.
  2. Add onions and apples. Sauté until onions start to turn translucent - about 7-8 minutes.
  3. Add in both cans of tomatoes, scraping up all the brown bits on the bottom of the pan.
  4. Add in remaining ingredients, bring to a boil.
  5. Reduce heat and simmer for 45 minutes.
  6. Remove bay leaf and blend with an immersion blender.
  7. Let cool and store in mason jars in the freezer.
  8. Use on pulled pork, BBQ chicken wings, crockpot chicken thighs and ribs!
